Our San Joaquin Gold is an American Original cheese created by and made only at Fiscalini Cheese Company. In keeping with European tradition of naming unique foods after the location where they were first produced, we named our San Joaquin Gold after the valley where it is made. San Joaquin Gold is an Italian style, semi-hard cheese with a natural thin rind and tawny buttery color. Mildly sweet and mellow when young, it develops a darker golden hue and nuttier deep lasting flavor over time. San Joaquin Gold is made from raw cow�s milk, hand crafted into 30 pound wheels and aged a minimum of 12 months.
