Hand crafted in Colorado Il Mondo Vecchio uses old world techniques blended with all natural, locally sourced ingredients. Started by 3 chefs, this artesian Salumeria focuses on creating small handmade batches of Salumi products. All products utilize Utah rock salt in the curing process and are Nitrite free. Il Mondo Vecchio Duck Prosciutto begins with top quality Moulard duck breast. The process to make duck prosciutto is similar to that of traditional pork prosciutto with a few twists. The duck breast is first rubbed in Utah red rock salt, Citron mélange, spices, and herbs then it is naturally aged and cured. To serve Duck Breast Prosciutto, slice paper thin and pair with dried fruit and a sweet cheese.
