Product Description
A.O.C approved, this is a sheep's milk cheese is produced in the French Pyrenees mountains. Ossau Iraty pronounced (OH-soh Ear-ahtee) is not produced year round; it is produced during the months of November and December only. Because the sheep graze at high altitudes their milk contains elevated levels of lactic acid. This pungent milk is what gives the cheese its unique flavor. Once the milk is harvested and the curds are pressed into their forms the cheese begins its aging in caves. As the cheese ages it is hand rubbed with oil and salt. The final product is nutty and salty in flavor and has a semi-firm texture that is sure to please.
