Product Description
French Mimolette, also called "Boule de Lille," dates back to the reign of Louis XIV, who prohibited the import of Dutch cheeses into France. This is a cows milk cheese that is aged in caves. The outside of this cheese when fully aged will look like the bumpy skin of a cantaloupe. The ridges in the rind are caused by cave mites that nibble at the cheese's exterior as it ages. Mimolette is aged 12 months, in this time it develops its mild, faintly sweet, and nutty flavors. To use this cheese simply allow it's bold orange interior accent any cheese plate.
