Idiazabal is a smoked and 60 day aged sheep's milk cheese from the Basque Country. The Basque Country is on the border between Southern France and Northern Spain. This unique cheese is chewy in texture and has a sharp smoky aroma. Because this cheese is smoked and aged for 60 days the producers are able to use raw sheep's milk, creating a truly unique cheese.
