From Parma in the Reggio Emilia region of Italy, this cows milk cheese is by far the all time Rock Star of Italian cheeses. Many cheeses are modeled after Parmigiano Reggiano. This 1 lb piece of Parmigiano Reggiano is made of raw cows milk and is aged for a minimum of 24 months.
As the cheese matures it develops white crystals that are comprised of hardened protein contributing to it's texture. The Parmigiano has a nutty red wine aroma that fills the mouth with its unmistakable piquant and robust flavor. This is a D.O.P. cheese that is tightly monitored by the Consorzio during all stages of its production. Once tested and fully matured the Parmigiano is stippled with small dots signifying that is has passed all tests and is indeed a true Parmigiano Reggiano.
Compare this cheese to the American "parmesan" version and you will see why it's so famous.
