This is a pasteurized sheep's milk cheese that is aged one year. The flavor of this cheese is that of nuts and caramel. Because of it's age the texture of this Pecorino is flaky and dry. The flavor is strong, tangy, and acidic. Use for cheese sauces or as a grating cheese.
