Traditionally a Sardinian cheese, this is a cheese that has been produced for hundreds of years, but recently made its way from Italy to the rest of the world. This is a sheep's milk cheese that is made in the Reggiano style. Beyond the unique way the cheese is made the milk comes from high mountain milk, producing a very pungent taste that is unlike any other Pecorino. Pecorino Gran Cru is aged for 20 months in cheese banks that are continuously cooled and monitored. This long age gives it a hard texture that becomes a salty creamy flavor when it touches your mouth. Use Pecorino Gran Cru as a table cheese, for grating, in soups, and for garnishes.
