Hand crafted in Colorado Il Mondo Vecchio uses old world techniques blended with all natural, locally sourced ingredients. Started by 3 chefs, this artesian Salumeria focuses on creating small handmade batches of Salumi products. All products utilize Utah rock salt in the curing process and are Nitrite free.

 

This traditional hand tied and pressed chub is based on a family classic with deep Calabrian roots. Coarsely ground pork, rich paprika, hot pepper and a duo whole black peppercorns is a testament to the old world.
